If you have ever raised your own chickens, you know there comes a time when you say, “What can I do with all of these eggs!” Or you have the mind that says, “My family eats a lot of “xyz”. How can I make a fresher, healthier version of that?” And some might even say, “There are raw eggs in homemade mayonnaise?!”
Homemade Mayonnaise
Yes indeed! There are raw eggs inside that tasty jar of creamy deliciousness. Before we even start; let me put out this little advisory so that every agency known to man does not come knocking at the barn door. Make it, eat it and enjoy it at your own risk. We, some of our customers and some of our friends have been eating this homemade mayonnaise for years using our farm fresh eggs. All still alive and never become ill from it. You want to use store bought eggs? Ehh… That should be left to only the real thrill seekers!
We recently did a collaboration, because that is what all of the cool kids are doing now, with Chasestudioco.com . Not only because the owner Katherine is a super talented, successful, food photographer and blogger, but mostly because she is one of our amazing daughters. When you have a child that is gifted in some area and they are standing in your kitchen, you take advantage of that. It is fair trade off for the thousands of dollars invested into their braces during earlier years!
The Recipe
I have come to find out that there are as many homemade mayonnaise recipes out there as there are opinions on what taste good and what doesn’t. This is one recipe…the basic recipe we use. You can add to it, subtract from it, and call it your own. The beauty of homemade anything is: you find a base idea and then alter it to meet your own needs and tastes.
Ingredients:
- 1 Farm Fresh Egg – room temperature
- 1 Cup Canola or Vegetable Oil
- 1 1/2 Tablespoon White Wine Vinegar
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Honey
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
Special tool required – Immersion Blender. Although, I have heard it said that you can use a regular blender or food processor. Heck, you can probably do it with good old fashioned muscle power and a whisk if you want a good work out!
